I tried making these sugar-free cheesecake bites first and they were way too soft and fell apart at room temperature. I spent a while trying to work out what went wrong and I think I have now solved the problem by changing the ratio of cream cheese to heavy cream and making sure I beat the cream cheese for long enough (3 minutes) before adding in the rest of the ingredients. This creates a really rich and velvety cheesecake which doesn’t collapse and doesn’t need to be baked in the oven.
